I'm having the same issue today.
In the cable, my DS3 works just fine. The bluetooth host address setup worked fine too.
But when I unplug the DS3 and it connects to the bluetooth dongle, the Shibari server startes to throw out lots of the same message, and the controller does not work:

The main error there says "the device does not recognize the command" and it seems to be linked with something that happens in the 122 line of the AirBenderDualShock3.cs file.
It could be something that this specific bluetooth dongle does not know how to do?
I'm using this old BT dongle because Shibari does not recognize my Laptop onboard BT (Acer Nitro 5 - an515-43 w/ Win10 Home 1903 18362.329).
